What happened?

TLDR, phillip and his great and mighty intelligence robbed the magic kingdom of some supplies and put ainz and re-estize in an awkward position that ended up going to war. Ainz ended up burning the kingdom to the ground, the worst part was their original plan was to take over the country but thanks to Phillip we basically get to lose the majority of the human cast other then Hilma, raeven, Renner and Climb.

it's demiurge and albedo aim from the beginning though, they want excuses to attack kingdom in other word they want casus belli, because this way ppl will not suspect socerer kingdom is evil who like attacking their neighborhood without reason

Not exactly. They indeed planned to use Philip to spark a war, but their initial plan was for him to divide the kingdom and start a civil war. That would give them pretext to invade as a peacekeeping action. The robbery though was a bunch of misunderstandings pilled together due to Albedo's underestimation of Philip's shortsightedness. It ultimately forced Ainz's hand and instead of sort of "peaceful" takeover he destroyed the entire kingdom.

why raze a kingdom with bad noble who stole him whereas he s strong enough for kill/punish singly any noble...and avoid killing citizen, the way ainz do thing is totally strengh fear stuff, not the diplomatic way he tried here.

He tried to do it through the peacekeeping way for the exact reason that U.S and other modern powers keep doing it that way. It's easier to sell your war that way. Ainz is trying to create a legitimate state so there are some restrains within which he has to work.
However Philip with his robbery humiliated him and his kingdom; and to add insult to injury it wasn't a covert action. Philip took the flag from the defeated caravan and paraded it around as spoils of war. So the war started. As an example to the rest of the world. As for the reason why they destroyed the kingdom it was because Ainz didn't have enough manpower to comfortably hold the kingdom after it was conquered. Thus they decided to destroy all the territory that they couldn't hold. Ironically this lack of manpower was what emboldened Philip to do what he did.
